Ratatouille on Big Green Egg

Our month of eating vegan has a lot of new challenges. One of the biggest is what to do with my cherished Big Green Egg’s. I liked that ratatouille is naturally vegan, and it seemed that cooking it on the Big Green Egg would be really good. I followed the Ratatouille’s Ratatouille recipe on Smitten Kitchen and instead of putting it in the oven I put it on the large Big Green Egg set up for indirect cooking.

It came out really good with a nice, light smoke flavor infused as well. I served it on a bed of couscous.

Vegan? Check. Grill? Check. Delicious? Check.

When it comes to grills and eating vegan there isn’t much overlap. However, the Big Green Egg is unique since it can do anything an oven can do, but better.

  1. Wow! That really looks good . But a lot. Did you have company? Teri, Joni, Susan and I are going to make lefse for Teri of coarse well have some too. Love Grandma Hugs to all.

    • Thanks! It was pretty good.

      It wasn’t that much. I think the photos look huge because I used miniature cookware. The baking pan was only 10″ long and I served it on small plates. :-)

      Wish I could be there to flip the lefse and sample!

      • Lefse turned out good. Made 18 dozen so split them up. Susan has mine as my freezer is full of other junk! I didn’t roll any as the girls want to learn how to do it all, they do real good. Do you have my recipe? Or are you one of them die hard real potato ones? Ha! Terry got a bag of instant ones at Bismark. We got 4 batches minus 2 cups which I had so all went well.
